This was very, very yummy. Enjoy!
Ingredients:
6 slices of bacon
1 cup chopped onion
2 minced garlic cloves
1/2 lb ground beef
1 cup minced celery
1 cup cubed carrots
2 cups tomato puree
2 (14.5oz cans) stewed tomatoes
1 (14 oz can) beef broth
1 (10.5 oz can) condensed french onion soup
5 cups of water
1/4 cup red wine
1 teaspoon dried oregano
1 teaspoon dried basil
salt and pepper to taste
1 cup chopped zucchini
2 cups spinach rinsed and sliced
1 1/2 cups uncooked small pasta shells
1 (15 oz can) garbanzo beans, drained
In a large stock pot, cook bacon and drain off fat. Add onion, garlic and beef. When onions are translucent, add the next 11 ingredients. Cook for 15 minutes. Add the rest of the ingredients and cook for 15 minutes more. Serve with fresh Parmesan cheese.
This makes a lot so be sure to share a bowl with a neighbor, family member or workmate! We ate on this for three days!
